Home Made Tomato Pasta Sauce

Well, sometimes I am having little time left to prepare for dinner as I am a working mummy. I used to purchase pasta sauce off the shelves from NTUC and only heat it up for the dinner. No doubt this is not very healthy and i find it a little too sweet but then again....Anyway, I will be sharing this easy method for pasta sauce and it is so guilty free, yet so yummy and it takes you extra say about 5 to 10 minutes of preparation time only.  








Recipe for 2 pax.

Ingredients:

1 small can of button mushrooms - sliced 
3 cloves of garlic - peeled n chopped roughly
1 box of cherry tomatoes
1 small can of tomato paste
small handful of chopped basil leaves
2/3 pack of pasta

Method:
1) Bring water to boil and drop in the pasta, add olive oil and salt into the water. Once cooked, scoop out the pasta and set aside. Do not throw away the pasta water for usage later. 
2) Heat up a pan and add olive oil to stir fry the chopped garlic. Add in the cherry tomatoes and stir fry until it is soft. Use the spatula to smash the tomatoes until all the juice come out and add in the mushrooms.
3) Pour in the tomato paste and mix thoroughly. Now we pour in 2 ladles of the pasta water and mix again. Add salt and black pepper to taste. Stir in the basil leaves before you off the flame. 
4) Pour it on the pasta and serve hot!


PS:

Add in more pasta water if you find the mixture is still too thick for your preference. Tah-dah! Guilty free sauce!
