Today feeling a bit lazy. Was thinking of dining out but my girl is revising for her exams. Thus I decided to cook a one pot meal.
Tomato Rice.
Recipe for 2 pax.
Ingredients:
1.5 cups of rice
1 big tomato
1 small carrot - shredded
1/2 pack of french beans - diced
6 fresh button mushrooms - diced
Seasoning:
2 tablespoons of chicken rice mixture
Method:
1) wash the rice and put lesser water as usual.
2) Stir in 2 spoonfuls of chicken rice mixture (for more flavoring as my girl prefers more saltish)
3) Dig out the stem of the tomato and slightly cut the back of the tomato as shown in the picture
4) Add in all the other ingredients and cook the rice as usual.
5) Once the rice cooker has stopped cooking, Use the rice spatula to smash the tomato and stir the rice. Make sure all the rice are evenly stir with all the ingredients. Close the lid for another 5 mins and done.
Alternative :
For a blander taste, you can skip the chicken rice mixture and replace with salt. However, to prevent the rice from getting coarse, stir in little bit of olive oil before you add in other ingredients.
