Caramelised Onions with Prompfrets

I saw these silver baby promfrets selling at 8 for $5 at the supermarkets near my house the other day. I was wondering what to do with these cuties when a Malay Aunty came by and saw me holding to these baby fishes. She told me that she used to pan fried it and eat with sambal chilli. BUT I don't take spicy chillis! So i decided to make a sweet onion toppings for these cuties.



   


Ingredients
Silver baby prompfrets
1 big yellow onion - cut into rings
1 ginger - peeled and sliced thinly strips
sugar n salt
flour for coating

Method:
1) Wash and pat dry the fishes. Rub with salt and coat in the flour.
2) Pan fried the fish until done. Set aside.
3) Heat up a pan with oil and stir fry the onions. Lower the heat and once the onions has turned soft, add in the salt and some sugar to caramelise it. Keep stirring until it turns brown and done.
4) Heat up some oil and deep fried the ginger till slightly golden brown and done.
5) Pour the onions and ginger on the fishes and enjoy!      


PS:

This is so delicious. The caramelised onions are so matching with white rice! Try it and you will love it as much as I do if you don't take spicy stuff.
